Pumpkin Pie Overnight Oats. These oats were delicious. They’re a perfect fall breakfast. Probably the best pumpkin oats I’ve ever had. I’m definitely going to make this again soon. I love overnight oats when I’m crunched for time in the morning. 

Ingredients 

  • 1/3 cup oats
  • 1.5 tbsp chia seeds
  • 1/2 tsp pumpkin pie spice (or 1/4 tsp cinnamon, 1/8th tsp nutmeg, 1/8th tsp ginger)
  • 3/4 cup Almond Milk
  • 1 tbsp pure maple syrup
  • 1/3 cup canned pumpkin
  • Walnuts (optional topping)
  • Raisins (topping)
  1. Combine all ingredients besides the toppings in a bowl the night before. 
  2. In the morning mix the oats and then top! Simple as that.
